Parmesan Garlic Chicken Wings

So lately I've been craaaaving Hooters parmesan garlic chicken wings. I decided instead of driving all the way over to Hooters I would try and find a recipe that would satisfy my craving. Plus I had most of the ingredients needed. This recipe is very simple and although it doesn't taste exactly like Hooters wings, it's a great alternative. The link to the recipe will be down below. Ingredients:

  • 2-3 lbs of chicken wings
  • 1 tsp dried oregano
  • 1 tsp dried rosemary (I didn't have rosemary so I used dried Italian seasoning)
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 2 tbsp minced fresh basil (I didn't have fresh basil so I used dried)
  • 2 minced garlic cloves
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp seasoning salt

Start by washing the chicken and season with salt and pepper.


Cover a baking sheet with foil and top with cooling rack.


Mix together oregano, rosemary (Italian seasoning), cumin and salt.


Place chicken on cooling rack and season with season mixture. Bake wings @ 425 degrees for 20-25 minutes flipping wings over half way through.


While chicken is baking, mix the basil, olive oil, season salt, garlic and parmesan cheese. I also added a couple tablespoons of melted butter to make the mixture a little creamier. 


Once chicken is done baking, in batches, toss and coat in garlic parmesan mixture.


I served the wings with Rice-A-Roni herb and butter rice and some roasted broccoli.

Recent Outfits

I've been a little MIA over the holiday, but here are a couple of outfits I wore right around Christmas. I'm in California but it has been very cold and rainy here lately. These outfits include pieces from my last post about smart shopping.:)

Sweet & Sticky Chicken

This recipe is so yummy. It calls for chicken drumsticks but I used about 3 lbs of chicken wings, so I also doubled the recipe. I'm sure you can use any chicken you like. The chicken had very nice flavor and not too sweet. The recipe says to marinate the chicken overnight but I actually marinated mine for 2 days. The link to the recipe will be down below. Ingredients:

  • 1-2 lbs of chicken
  • 1/4 cup honey
  • 1/4 cup balsamic vinegar
  • 1/4 cup light brown sugar (packed)
  • 2 tbsp soy sauce
  • 1 tbsp ground ginger
  • 3 cloves of garlic

Start by washing chicken and season with salt and pepper.


Whisk the rest of the ingredients in a bowl.


Put chicken in a large zip lock bag and pour marinade over chicken.


Toss to coat the chicken and marinate in the fridge over night.


Line a baking sheet with foil and place a cooling rack on top.


Take chicken out of marinade and place on the cooling rack. Bake @ 400 degrees for 25 minutes.


While chicken is baking, pour the marinade into a small pot and bring to a boil. Simmer for 15 minutes until slightly thickened. 


After baking for 25 minutes, brush chicken with marinade and turn over and brush the other side. Continue baking for another 15-20 minutes.


I served this chicken with mashed potatoes and steamed broccoli.

Smart Shopping

I, like everyone else loves a good deal. And I absolutely believe that you don't have to spend a fortune to look good. Don't get me wrong, there are some things that I splurge on but for the most part I'm pretty frugal. I love stores like Forever21, Target, Ross, TJ Maxx, etc. You can find awesome name brand items for much cheaper. Sometimes you just have to do a little digging.:) 

In the last couple months I have gone through my entire wardrobe and have listed everything that I no longer want on eBay. It's a great way to make some extra $. So that has helped me not only buy some Christmas presents, but also add some new pieces to my closet.:)

These Nine West pumps were also an amazing deal. These were actually a birthday gift but were found at Ross for $25.99.:) They retail for about $65.





These Miss Me jeans I found on a clearance rack at Macy's and they had a friends & family coupon I used at the time. So I got them for a very good price.

Buttery Lemon Shrimp

This recipe is very easy and so so good! Only 4 ingredients needed. I have a 2 1/2 year old so any quick and easy tasty recipes, I'm all over it. I served this shrimp with Rice-A-Roni Herb and Butter rice and some roasted green beans. Happy eating.:)


Ingredients:

  • 1 stick of butter
  • 1 TBSP of Italian seasoning
  • 3 lemons
  • 1-2 lbs of shrimp (shelled, deveined and tail removed)
Start by washing the shrimp and set aside.


Slice the lemons.


Cover a baking sheet with foil and evenly distribute the lemon slices.


Melt the butter and add the Italian seasoning.


Add shrimp and mix to coat.


Spread the buttery shrimp mixture evenly over the lemon slices and bake @ 350 degrees for 10-15 minutes.

Lipgloss

I think I have found my absolute favorite lipgloss. Revlon ColorBurst is amazing! Super soft and not very sticky. I'm not a fan of lipgloss that is super sticky. There are about 10 different colors to choose from. The 2 colors that I have are Bordeaux, which is a wine color and Brilliant Bordeaux, which is a mauve lilac color. They both have a little shimmer to them. I believe the Brilliant Bordeaux is part of some Revlon holiday colors. They are right around $7.00 and can be found at any drug store. I bought mine at Target and Ulta.

Cheesy Tortellini Bake

Ok, so, I couldn't find a tortellini bake recipe that I was super in love with so I just made up my own.:) This recipe includes veggies and some italian sausage. Also, two kinds of cheese. Anything with cheese is good in my book. The more cheese the better.:) Happy eating.:)


Ingredients:
  • 1 1lb bag of cheese tortellini
  • 24 oz jar of pasta sauce
  • 4 oz of cream cheese
  • 5-6 mushrooms
  • 2 small zucchini 
  • 1/2 yellow onion
  • 1 small red pepper
  • 2 pieces of Italian sausage
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp of olive oil
Start by bringing a pot of salted water to a boil.


While your water is coming to a boil chop all veggies and dice the Italian sausage. I used a chicken Italian sausage.


Dice the cream cheese and put in a pot and pour in your pasta sauce. Heat over medium heat until cheese is melted.


Heat 2 tbsp of olive oil in a pan and sauté the onion and red pepper together for about 5 minutes until tender.


Then add in the zucchini and mushrooms and sauté for another 1-2 minutes until tender.


Lastly add in your sausage and cook for 1 minute until heated through. Remove from heat and set aside.


So by now your salted water should be boiling. Pour in your tortellini and cook according to package. Then drain.


Once drained, pour tortellini back into the pot and mix with the veggie and meat mixture.


Stir in your cheesy pasta sauce. No need for salt or pepper. With all the cheese this dish has plenty of good flavor.


Pour into a 13x9 baking dish and top with shredded cheddar cheese. Bake @ 350 degrees for 30 minutes until cheese is melted and bubbly.
