This recipe is so yummy. It calls for chicken drumsticks but I used about 3 lbs of chicken wings, so I also doubled the recipe. I'm sure you can use any chicken you like. The chicken had very nice flavor and not too sweet. The recipe says to marinate the chicken overnight but I actually marinated mine for 2 days. The link to the recipe will be down below. Happy eating.:)
Ingredients:
- 1-2 lbs of chicken
- 1/4 cup honey
- 1/4 cup balsamic vinegar
- 1/4 cup light brown sugar (packed)
- 2 tbsp soy sauce
- 1 tbsp ground ginger
- 3 cloves of garlic
Start by washing chicken and season with salt and pepper.
Whisk the rest of the ingredients in a bowl.
Put chicken in a large zip lock bag and pour marinade over chicken.
Toss to coat the chicken and marinate in the fridge over night.
Line a baking sheet with foil and place a cooling rack on top.
Take chicken out of marinade and place on the cooling rack. Bake @ 400 degrees for 25 minutes.
While chicken is baking, pour the marinade into a small pot and bring to a boil. Simmer for 15 minutes until slightly thickened.
After baking for 25 minutes, brush chicken with marinade and turn over and brush the other side. Continue baking for another 15-20 minutes.
I served this chicken with mashed potatoes and steamed broccoli.
